I started cooking many years ago. But sometimes you need to take it to another level.
A few months ago, I realized that I use way too much time in front of the computer. It was time to geek out at something else. Cooking. As a start, I ordered a small library. Some for inspiration, some to define my goals and some to learn the basics of the art.
- What Einstein Told His Cook: Kitchen Science Explained
- Molecular Gastronomy: Exploring the Science of Flavor (Arts and Traditions of the Table: Perspectives on Culinary History)
- Under Pressure: Cooking Sous Vide
- On Food and Cooking: The Science and Lore of the Kitchen
- The Fat Duck Cookbook
I also bought some basic equipment.
- Thermapen
- Digital Pocket Scale (0.01g accurate)
- Foodsaver vacuum machine
- Auber Sous Vide controller
- Rice cooker
I’ll try to blog my experiments in food. I hope you can learn from my mistakes. Here is one:
Never ever, under any circumstance vacuum infuse Granny Smith apples with Bacardi Razz. Just don’t.
